If you’ve got a BBQ, then you’ll be forgiven for thinking that you should only use it in summer. People love cooking outside when it’s sunny, and we all love to dish up plates full of burgers, sausages, chicken, and loads of other meaty goodness. But, nothing is stopping you from cooking on your BBQ all throughout the year. In fact, it’s such a great cooking tool that it would be a shame to only use it a few times per year.
With that being said, I’ve got a few incredible BBQ ideas that are different from the norm. There’s no point going on about chicken and beef because we’ve all done that before. Yep, you can BBQ a pizza if you want! If anything, this is one of the best ways to cook pizza if you don’t have a proper pizza oven. In my opinion, it works so much better than cooking in your oven because you get the flavor from the hot coals, the slight charring on the base - it’s a little bit more authentic!
There’s not really much to say about this idea other than you need to make pizza! There are loads of pizza dough recipes out there for you to try out, or you can get pre-made stuff in most grocery stores. Pre-made saves a lot of time, but it never tastes as good as when you make it yourself, so bear that in mind. Choose your toppings, then pop on the BBQ grill, close the lid, and cook for around 2 or 3 minutes. Lift the lid up to check if the cheese is bubbling and the base is cooked.
That’s it; you’ve got a stunning pizza in just a few minutes. If you really want to make things as best as they can be, then get a BBQ safe pizza stone and use that to cook it on. This is entirely optional but well worth trying!
Tofu often gets a bad name as it can be pretty bland and tasteless. Not to mention it doesn’t really cook that well in frying pans - you need to have a lot of heat. Thankfully, you get just that with a BBQ, which is where tofu really comes into its own. You get a nice gnarly outside that crisps up with a classic BBQ char, and then a soft inner that’s so delicious.
The key to great tofu is packing it full of flavor. Here, you need to marinade it overnight in a dressing that gets soaked up by it. Once you’ve done this, make sure you drain the tofu so there’s as little liquid in it as possible. This makes it ideal for grilling - and it should be cut into decent sized chunks as well.

They’re so fresh, and it’s just like you’ve caught some scallops in the wild. The good news is, you can get them with their shells on, and sometimes even cleaned and prepped for you already. If that’s the case, then it makes your life easier. If not, then make sure you clean the scallops before you cook them.
Then, all you need to do is place the scallops on the hot BBQ coals - still in their shell - and close the lid. Cook for around 5 or 6 minutes, then take them out and drizzle with some yummy garlic butter. It’s such a delicious idea, and definitely, one to convert even the biggest fish hater out there.
The little quesadilla is one of the best Mexican treats you can ever eat. This one will be packed full of melted cheese that oozes out of a crisp flour tortilla. Yes, you can cook these in a pan on the hob, but where’s the fun in that? Plus, authentic quesadillas always get cooked on a grill to give the lovely BBQ lines on the tortilla.
It’s so easy to make, all you have to do is get a flour tortilla, then line it with your filling. You could use chicken, beans, fish, chargrilled vegetables - whatever you want. All I say is that you need to sprinkle a lot of cheese on top. Cheddar works well, and Monterrey Jack is ideal for quesadillas too. Then cover with another tortilla, and stick on the BBQ grill. Flip it over halfway through cooking, and you’ll know it’s done when the cheese starts to ooze out the sides.
Such an easy BBQ idea, and one you can really play around with. If you really wanted, you could just include loads of different cheeses and have a fancy Mexican toastie type thing!
