Avocado Pesto Sandwiches
Hi friends! I've been a little absent from my little blog this week. Pregnancy is not as glamorous as they would have you think! Even though I am a few days short from week 19 I am still having the occasional morning sickness and other types of discomfort. Growing pains are particularly bad! But I'm better now, for a long time I hope, so let's go back to what we love the most: to take pictures and eat!
I found a gorgeous recipe the other day on Tastespotting and since I've been advised to eat an avocado a day, I decided to give it a try. They say avocados are good for pregnant women because it has a lot of folic acids, which is known to help prevent deformities in babies, but it is also good for you, as it also prevents terrible things like depression and the one that I am scared, the most, preeclampsia. You are supposed to start taking folic acids as soon as you decide to get pregnant, and so is your partner. I'm liking that these days the dads are very involved. Someone asked me the other day if my husband goes with me to all the doctor appointments and I said yes! I didn't make this baby alone, and it's good for him to be involved.
The original recipe calls for feta cheese, which I love! Before I got pregnant we went to a cheese tasting in Fairview, and had the most delicious goat cheese, being a favorite since then, sadly, I can't eat either of them freely: goat cheese is out of the question and feta cheese should be only be made with pasteurized milk, and mind you, I've checked the ingredients and haven't found one that specifically mentions that is made with pasteurized milk. So rather be safe than sorry!
There are so many things I can't eat, and that I miss terribly, like sushi. Last weekend I was craving it so badly that went with vegetarian sushi, and I have to say, I wasn't disappointed! I'm starting to "like" chicken again, after almost 4 months of not being able to even look at it; still not fond of potato chips, and on things that I never ate before and now I love we have chili flakes and Sprite!
I only posted one time this week but I hope I am going to feel better now that I am in the second trimester, luckily I will be able to go back to posting 3 times a week! Let me know what you think of this avocado sandwich and if you have any ideas you'd like to share!
Avocado Pesto Sandwich
- 2 avocados.
- 1 bunch of baby spinach.
- 250 ml of pesto.
- 8 slices light mozzarella cheese.
- 8 slices of bread.
- Cooking spray
Takes , serves 4.
- Spray a pan over slow heat with cooking spray.
- Slice the avocados to your preference.
- Spread pesto onto each slice of bread.
- Next, add to one slice of bread the spinach, avocado, and 2 slices of cheese.
- Top with another slice of bread and cook until golden.
- Repeat with each sandwich.
