Simple dinner ideas for busy nights: brown rice with spinach and mushrooms

I decided to start following a meal plan, mostly because I needed inspiration about what to eat. On one day the menu for dinner was just "brown rice and spinach". If you put it that way it doesn't sound appetising at all, especially to someone like me, who doesn't really like spinach.

I did a quick search on Pinterest and found that there is very little information about how to cook brown rice. At the beginning, when I started to get to know brown rice, I didn't like the taste that much, so I was using it only in salads, that means, eating it cold, which was fine.

Brown rice, like almost all healthy foods, it is not very tasty by itself, despite its many benefits: it's low in calories, high in fibre, and it is excellent for people with digestive problems, or who need a gluten-free diet. Did you know that is also very beneficial in the prevention of cancer and diabetes? Me neither. That's why brown rice is considered one of those famous superfoods that are so popular on the Internet. So what do you do when you want to be healthy, but also want to enjoy your food? You add spices. Paprika and cayenne pepper were winners with this dish.

If you have been reading this blog you might know that I like mushrooms too much (and breakfast!), so it was a no-brainer that I was going to add them!


Also, you won't need a lot of time to make it so it is more than perfect for those busy, week days when all you want to do is to sit and watch your favourite show :D This rice turned out so good that I didn't mind eating it by itself. 

Papaya Smoothie

Recipe - Brown Rice with Spinach and Mushrooms

Ingredients (4 servings):

  • 1 cup brown rice.
  • 1 cup frozen spinach.
  • 1 cup mushrooms.
  • Black Pepper.
  • Paprika
  • Cayenne Pepper.
  • 1 tbsp. olive oil.
  • Half white onion.
  • 1 crushed garlic.
  • 1 cup chicken stock.


  • Add the frozen spinach to a pan over medium heat.
  • When the spinach starts to cook, add the mushrooms. Stir.
  • On a pot, cook the onions over medium heat and add rice.
  • Add spices and chicken stock.
  • Let it simmer for 20-30 minutes.
  • Add in the spinach and the mushrooms, stir very well and serve.
